‘Spiti’ means home – and the “Mykonian Spiti” is our home that you are welcome at, during this cooking experience. Although this activity highlights the traditional factor of the Mykonian lifestyle, on the other hand a “traditional” description of its “programme” hardly does it justice. This may sound vague, but during these 6 hours (approximately) you will experience the traditional Greek way of life, the culture, the Greek art of cooking. It is not what you will do, it is mostly how you will do it. During this time you will learn tips and cooking methods that have made Mykonian Spiti, Mykonos and Greece, loved by its friends and visitors, but most importantly you will instil the hospitality and the everyday lifestyle of a traditional Mykonian family.
To become a bit more specific, after you are collected from your hotel (or the port or the location you prefer) and transferred to the Mykonian Spiti, Teta will wholeheartedly invite you into her beautiful Mykonian home and create a charming and intimate evening that will turn this visit to the “Island of the Winds” into a highlight of your trip. She will teach you about Mykonian culture and history, share stories about her family’s life and make you feel just as if you are visiting close relatives or friends. She will share stories about Mykonian true lifestyle and chat with you while you will taste and enjoy some Mykonian meze snacks like dakos with kopanisti cheese and tomato, louza (sun dried pork fillets), wine and Cretan raki. You will wander through her vegetable garden, learn about local organic farming and enjoy a wonderful time.
And then onto the kitchen where we you will make tzatziki, spinach pie, stuffed peppers and tomatoes and everything else in our Mykonian Spiti’s traditional menu. All guests, will be supplied with protective equipment (aprons) from the Mykonian Spiti estate. Most cooking ingredients will be readily available in special bowls in the kitchen area ready for the menu preparation. Teta will guide you through the whole procedure, giving the opportunity to everyone to master their cooking skills. There is a small intermission between the preparation and the tasting stage, which can be used for a short period of relaxation and to enjoy the company of those around you, but after that lunch or dinner starts, where you can consume as much as your belly holds.
There are many other details to the “class” that we could share with you but the essence is that as you can see, this is much more than learning to cook a fabulous Greek meal. It is also about family, conversation, food and culture and becoming a member of a family that perhaps you didn’t even know you had. It is quality time in the home of someone close to you, finding yourself in their kitchen helping to cook, enjoying the experience of meeting new people and honouring us by becoming a part of our family.
There is a possibility for the menu to be modified in case a guest has food allergies or any other special dietary needs.
Ingredients(4 persons):
3 Tomatoes, 1 Zucchini, 3 Peppers, Mint, Olive Oil, 1/2kg Rice,Pepper, Salt, Sugar
How to cook:
We open the tomatoes and the peppers, and we keep
the inside in a bowl.
We grade the zucchini inside the bowl with the tomatoes and the peppers.
We also put salt, pepper, mint, rice, one spoon of sugar and olive oil and we stir them altogether.
Afterwards we boil the mixture for 10 minutes.
We stuff the tomatoes and the peppers, we close them with the “cap” and we cook in the oven for 1 hour, with oil and water in the pan(180 degrees)
Ingredients:
1,5kg Fresh Spinach, 1kg Feta Cheese, 6 fylo pastries,
2 Eggs, 100gr. Dill, 100gr. Leek, Fresh Onion, Olive Oil,
Salt, Pepper
How to cook:
We cut the spinach, the leek and the dill in pieces.
In a pot we put some oil, the fresh onion, the dill and the leek together and we fry for at least 10minutes,
Afterwards we add the spinach, salt and pepper and we continue cooking for at least another 10minutes.
Then we leave it to cool.
We spread a baking pan with olive oil and we put one fylo pastry. We spread the fylo pastry with oil and we continue the same way with another two fylo pastries.
At that time, we check the spinach blend to see if it’s cooled enough – if it is, we put it on top of the fylo pastries.
We cut the Feta cheese in pieces and mix it with the eggs, in a bowl and afterwards we put the mixture on top of the spinach blend. Following the same way, we add the last 2 fylo pastries on top.We carve the top of the spinach pie, as if it is cut in pieces, with a knife, spread a little water on top and put it in the oven to bake for 1hour (180 degrees)
Ingredients(4persons):
1kg Beef, Tomato Sauce, Olive Oil, White Wine, Sugar,
Pepper, Salt, Cinnamon, Orzo pasta (1/2 kg. for 4 persons),
Garlic
How to cook:
In a pot we cook the beef with olive oil, little garlic, salt and pepper, for half an hour,
Afterwards we pour one small glass of wine and we cook for 10 more minutes.
Then, we add the tomato sauce, cinnamon and continue cooking for another half hour.
Once it is done, we put it in a pan, add water (about 1lt) and the orzo and cook it the oven for half an hour.
When you will see that the orzo is ready, it is done.
Ingredients:
1 Cucumber, 250 ml yoghurt, garlic, olive oil, salt, vinegar
How to cook:
In a bowl you grade the cucumber. You press the cucumber with your hands to take out all the water and thow it out. You add yoghurt, garlic (as much as you like) little salt, little vinegar and olive oil, you stir it and its done.
Ingredients:
1kg peppers(all speeches), 1 sausage, olive oil, salt, pepper, tabasco
How to cook:
In a pot you put olive oil and the peppers after you cut them in slices. You leave it to cook for about 10-15 minutes. Then you add the sausage in pieces, salt, pepper and tabasco. Put as much as you like it depends how spicy you like your food. You leave it for about half hour to cook and it is ready.
